Whatever you buy, measure the inside of your oven, leaving room around the handles, before you buy a pan. For a very large bird or a crowded holiday oven, an electric roaster oven is another option.

Best Stainless Steel Roasting Pan
Stainless has no coating to scratch, and the TeamFar listing describes its pan and racks as dishwasher safe. Made In’s 3-ply clad pan adds an aluminum core, which the brand says spreads heat for even browning, and calls the pan non-reactive for wine, vinegar or citrus sauces. Stainless costs more effort to clean than nonstick, and the clad pan is the heaviest here at 8.6 pounds.
Best Nonstick Roasting Pan
Nonstick pans like the Armorbear, Glad and MICHELANGELO release baked-on drippings more easily and are lighter, between 2.35 and 3.2 pounds in the specs. Coatings ask more of you: Glad warns against metal tools, steel wool and stovetop use, MICHELANGELO says to hand wash, and Armorbear recommends hand washing even though it calls its pan dishwasher safe. Coating claims such as “PFAS-free” are each brand’s statement, not something we verified.

Best Disposable Roasting Pan: When It Makes Sense
None of our picks is disposable. Foil roasting pans make sense when you are cooking at someone else’s house or only roast once a year, but they flex when lifted with a heavy bird inside. - Cook it to 165°F. The FDA’s holiday food safety tips say a turkey is safe when it reaches 165ºF, measured in the innermost part of the thigh and wing and the thickest part of the breast, and that stuffing should also reach 165ºF. - Thaw it safely. The same FDA page says never to defrost food at room temperature; thaw in the refrigerator, under cold running water or in the microwave, and allow time. FDA’s example: a 20-pound turkey needs four to five days to thaw completely in the refrigerator.

- Turn handles in. USFA advises turning pot handles toward the back of the stove, which also applies to a roaster resting on the cooktop for gravy.
